First, preheat the oven to 425°F
Place eggs, milk, flour, vanilla extract and salt in a blender and blend until smooth.
Put butter in cast-iron skillet on high heat until bubbles appear. Then pour batter in the middle of the skillet.
Bake 20 to 25 minutes (until puffed up and golden brown).
Top with preserves or berries (optional), squeeze lemon juice, and dust evenly with confectioner's sugar. Enjoy!
